For one piece designs, test equipment and quick prototypes I use development kits.  Even if I don't use the peripherals in the kit, I have a nice bond-out for wirewrapping.  Of course, having a display and graphics library really moves things along.

Interesting survey, Certainly control systems and robotics areas are highly mixed and require more usage of custom made PCB's relatively.
